The popular Santoku SS San Mai 180 is a kitchen knife blade made out of a Swedish Sandvik stainless steel 19C27 core with layers of stainless steel hardened to HRC60.

The upper part of the blade is a traditional Japanese hand hammered "Tsuchime" which helps to separate food when you cut and slice.
